Dark green leafy vegetables are, calorie for
calorie, are the most concentrated source of nutrition
of any food group.
Greens are a rich source of nearly all of minerals &
vitamins (B12 is the only one absent). They also provide a variety of
phytonutrients including beta-carotene, lteuin, & zeaxanthin, which protect
our cells from damage & our eyes from age-related problems, among many other
effects. Dark green leaves even contain some amounts of Omega-3 fats.
